Favourite Foods Blog Posts - Help Required!

Hey Everyone,

As you guys may be aware I have a blog (http://appletonpug.blogspot.co.uk/). One of the posts that had done very well was all about healthy eating and exercise. I find it interesting to learn what other people to to keep healthy. I have teamed up with fellow PUGster and blogger Tahitia Belle Fille  (http://tahitiabellefille.wordpress.com/) to put together some regular posts about food! This will be to show off peoples favourite meals (healthy or unhealthy) in order to learn people choices from all over the world. In order to do this we will be asking people to take photo's of their food and explain what it is, some times provide recipies, some people may even wish to share their own food diary and exercise plans. There is no end to this really as people could share snacks, drinks, deserts, all kinds of stuff! We all eat different based on foods available to us, local produce, local popular foods, culture, price, availability, whether its 'good' or 'bad'. We also have those meals we just love even if they are not text book healthy meals, some people may be slightly off the healthy scale, some may be pure fast food! I find other people very interesting and how we all lead our own lives. Food, health, diet, exercise usually plays a big part in life for many women and I thought we could all learn about each other in a new fun way! Tahitia lives in Canda, I am in England. As a team working on this we can help to provide a wide range of insights for both our follows.

Please let us know people or contact either of us directlu is you would like to feature. As mentioned above you can 'feature' in many ways, Ive listed some below. Just let us know what option you would like to do!

Take a photo of your best meal (healthy/unhealthy or both) with an explaination of what it is and possible recipe if you can provide. We can put as much or as little about yourself as you would like but would definitely need to display location as thats one of the main things to find out what over people in different areas like.
Produce a food diary to share along with photo's and info about it.
Along with the food type of stuff sharing an exercise plans you follow, sports etc could be interesting.
Or just contact us and we can play it by ear and decide once we've spoken!

Don't have a photo yet (I'll take one tomorrow for you), but here's a recipe for my energizing fruit smoothie! 

  • 4-5 raspberries
  • 4-5 blackberries
  • 6-7 chunks of pre-sliced watermelon
  • 3 strawberries (can be any size)
  • 8-10 blueberries 
  • 6 oz orange juice (or any fruit juice) 
  • 1 6oz pack of plain (or vanilla) lowfat yogurt
  • 2-4 ice cubes
  1. Blend for about 2 minutes, or until smooth. And enjoy. 

And again, I'll get you a photo tomorrow. :)

Oh! You mentioned location. I'm in Pinellas County, Florida.

this sounds fun, I have tried to do dinner of the day posts but my camera takes awful pictures of food.  I don't know why, I'm pretty sure its the lighting in my kitchen lol.  Count me in! tonight I am making baked spaghetti squash "lasagna" with chicken sausage, spinach and kale.  I will try to take a picture :)  For breakfast I had a cup of green tea and a spinach smoothie, my usual.  the spinach smoothie looks gross, it takes on a kind of muddy brown color, but it tastes good.  Just frozen berries (of your choice), frozen banana, a couple big handfuls of spinach, 2 tbl ground flax seed, and some water to thin in out otherwise you end up with spinach sorbet.  it keeps me full until lunch, even through an intense workout. 

I can't wait to see what others post too.  could be very interesting ;)

here are some pictures

here is the spinach smoothie, like I said it doesn't look too terribly appetizing :)

this is the spaghetti squash lasagna

quarter the spaghetti squash and bake at 400 for 30-45 minutes

in a large bowl mix together 15 oz of ricotta cheese, 1 egg, nutmeg, Italian seasoning, salt and pepper to taste, spinach and kale (however much you want, I used a couple handfuls of each)

when cooked and cool enough to handle, scrape the flesh from the squash with a fork to make spaghetti strands.

combine with ricotta mixture

meanwhile, slice chicken sausage, I used Andouille style but whatever you prefer will work, and heat in a pan, brown as desired

combine all ingredients in a baking dish (9x12) and sprinkle with mozzarella cheese

bake at 400 18-22 minutes until bubbly and cheese is melted.

That spaghetti squash lasagna looks absolutely delicious Cela, thank you so much for posting the recipe and those pics :) Also Ellie Mae that smoothie looks REALLY tasty, I think I'm going to be trying that one out VERY soon!

Oh, my gosh that spaghetti squash dish looks amazing. 
But I'm not a big fan of squash, is there another veggie you would recommend to use to make the noodles?

Ellie-The spaghetti squash is ideal because when it cooks it actually shreds in to spaghetti like noodles.  It has a really mild taste, not like butternut squash. I haven't tried it with anything else.  I imagine you could substitute a lot of shredded veggies, like a mix of carrot, zucchini, and cabbage.  you would want to do a thicker cut on them, like a thick julienne, so they don't get too soft and mushy.  The best part of cooking is using your imagination ;) If you try something, I would love to hear how it turns out.

Another thing you could do is do half spaghetti squash and half actual spaghetti.  It would mellow the flavor even more and you can decide if you like it.

Okay guys here's my contribution to this thread, lean turkey taco's!

My husband and I made these last night and they're always a quick and tasty favourite of ours.


You just take 1 pound or 0.5 kg of minced turkey.

Brown it in a non-stick frying pan at a little more than half power for between 7 to 10 minutes until fully cooked.

Strain the turkey from the drippings and put the turkey but it back in the frying pan.

Add 250 ml of water to the turkey in the pan with your choice of powdered taco meat seasoning.

Once the meat has been fully seasoned just scoop and serve onto a soft flour tortilla shell with your choice of toppings. My hubby and I usually go with mild cheddar cheese, diced iceberg lettuce and light to mild salsa (no onions though because I really don't like onions).

I can usually eat 2 of these in the evening and they always fill me up without making me fell like I'm going to burst.

I don't normally use a toothpick in the taco but I did here just so it would keep it's shape for the picture :)
